October’s Sunday Dinner menu is loaded with fall faves and will certainly Give ‘em (your dinner guests) Pumpkin to Talk About. As a little chill in the air enters the chat and we start breaking out our light jackets, sweaters, and scarves, I’m very much in my “Mariah Carey is defrosting” era. In short: I absolutely love the fall. Your body starts to move a little slower and signals that it’s time to stay home (my favorite thing to do), get cozy, and cook! It’s high time for all things warm and fuzzy, and this menu is everything you want this time of year. Pumpkin & Chickpea Stew is inspired by rustic Italian stews and transports you to the hills of Tuscany, sporting your cutest mock turtleneck, after the first bite! All of your fall faves are present (carrots, pumpkin, butternut squash, and sweet potato) with fennel, woodsy herbs, and herby croutons in supporting, but equally important, roles! Next to your new favorite fall soup (I said it!), serve something bright, crunchy, and citrusy to wake up the palette. My Favorite Fall Salad is here to grace your tables! Hearty kale, pepitas, and roasted butternut squash are smothered and covered with my Garlicky Citrus Dressing for a fall flavor bomb in your mouth! Herby Croutons bring it all together with one big carby hug. While I envision them dotting this gorgeous orange soup before you serve, you could also toss them into the Favorite Fall Salad and really get kinky! Happy fall, girls. Let’s Give ‘em Pumpkin to Talk about!
