This is my very first published risotto recipe!!! What took me so long, you ask? Well, we can blame my mom! She became obsessed with making risotto at some point in my teenage years, and it was all we ate for many, many meals. One day, when she made “beet green risotto”, I had a meltdown and begged her to stop. Anyway, thanks to my therapist, we now have ourselves a creamy, sweet and satisfying corn risotto that comes together fast on the stovetop and disappears even faster on your plate!
