Mom’s Turkey Burgers

My mom has these on hand in the refrigerator (or freezer) all summer long. She keeps the ground turkey moist by adding greek dressing (you can also use Italian) to the mix, giving it a heavy dose of fat and flavor! She also packs them with chopped spinach and feta (or cheddar) cheese so every bite is a delight. This recipe is highly adaptable, so play around with it and make it work for you! I love serving them on buns with tzatziki or on top of a big greek salad, with more dressing, of course! Oh, and this recipe makes amazing meatballs, too!

Mom’s Turkey Burgers

What You’ll Need

1 ½ cups panko or  bread crumbs (my mom uses GF)

½ cup Greek dressing (Italian would be great, too!)

½ white or yellow onion, minced or grated

1 egg (can be left out for allergies, just add a little more dressing)

½ tsp each salt and pepper 

1 cup (5 ounces) crumbled feta cheese

1 ½  cups (2.25 oz) chopped baby spinach

2 lbs ground turkey OR 1lb ground turkey and 1 lb ground beef (my mom does both, depending on her mood)

Tzatziki, homemade or store-bought, for serving


What You’ll Do

  1. In a large bowl, mix 1½ cups panko or bread crumbs, ½ cup dressing, ½ onion, minced or grated, ½ tsp each salt and pepper and mix together to hydrate the bread crumbs. Add 1 cup crumbled feta cheese, 1½  cups chopped baby spinach and 2 lbs ground turkey and mix to combine. I like to use my hands for this.
  2. Form into ¾ inch thick 8 patties and use your thumb to make an indention in the center. This will help with even cooking throughout. 
  3. Over medium heat on a grill (400-450 degrees), cook the turkey burgers until they reach an internal temperature of 165 degrees, about 8-10 minutes, flipping once. Remember, let the burgers self-release from the grate before flipping! Oiling your grates with a neutral oil beforehand will also help. 
  4. Serve the burgers on a bun with your favorite toppings. Ketchup and mustard are great, but tzatziki takes it to a really lovely place! Or serve it over a Greek salad, with more Greek dressing!

Notes

If refrigerating formed patties ahead of time, be sure to remove the patties 1 hour before you plan to grill. Grilling cold meat will affect the cooking times. 

You can also pan sear or broil the burgers if you do not have a grill!

This recipe loves subs and swaps. Try a different leafy green or herb, or leave them out all together! Try your favorite cheese! Leave out the egg and add a bit more dressing instead!
