Summer is in full swing and I am still spending as much time as humanly possible tending to my garden and cooking on the grill. Because we are enjoying every last second of summer, this menu is meant for those nights you *barely* want to cook. Maybe you don’t want to turn the oven on and heat up the house, maybe you’re feeling lazy after a pool or beach day, or maybe you just want a low-on-effort, high-in-flavor meal. All you need is your favorite seasonal produce, a grill, and some good summer vibes to pull this one off! Grilled pizzas are a game changer (listen to your mother). This menu has two because us Grossy Girls love options! First, make homemade pesto. You’ll use this pistachio pesto as the base for both pizzas. Pizza #1 uses pistachios and basil for a super green, super delicious sauce! Cover the pizza dough with pesto then top with ripe, juicy peaches and tomatoes (they pair perfectly together), burrata and a sprinkle of chopped pistachios!. Pizza #2 follows the same steps, but instead top it with fresh corn, zucchini ribbons, and creamy goat cheese. The grill adds the perfect crunch to the pizza crust while lightly cooking these perfectly seasonal delights. These are best served with an ice-cold drink on a balmy summer night. Serve a simple, lemony, peppery arugula salad on the side (or on top of each slice!) for a little extra texture and even more green. Two for the Pizza One!
