As September begins, school is back in session, everyone is welcoming (maybe) a little more routine in their lives, and well, I am here to provide a big, dramatic dose of comfort food with this month’s Sunday Dinner! When I think of comfort food, my mind immediately goes to pasta, specifically pasta covered in Vodka Sawce…always! Last week you may have noticed it was Vodka Sawce Week on my Instagram, and this recipe is in the spirit of doing all types of kinky things with Vodka Sawce. Rigatoni Pie is more than just a recipe, it’s also a really fun craft project, a sculpture, a statement piece, and really creates a WOW moment when you slice into it at the table before serving. It’s the crown jewel of my Vodka Sawce creations, and I can’t wait for you to try it! First, make my Vodka Sawce. You can always buy storebought, but I can’t speak highly enough of this homemade, rich, glossy sawce. Once the sawce is made, make the pasta and start assembling your Rigatoni Pie. You’ll need a springform pan, a sheet pan, and a little patience. After the pasta is assembled, cover the rigatoni tubes with plenty of sawce, making sure each is filled to the brim (I warned you this could get a little kinky)! Cover with plenty of cheese, and bake! What you pull out of the oven is nothing short of a masterpiece. Serve with a couple pieces of cheesy garlic bread to make sure no sawce is left behind, and a side salad, because vegetables! It reheats perfectly the next day for leftovers or school lunches.
