January is famously the month where everyone is *convinced* that they need to eat more vegetables after weeks of holiday celebrations. While there’s nothing wrong with a smoothie or a salad, I personally like my vegetables smothered in cheese and cuddled up next to pasta. I find this keeps the festive holiday spirit going a little longer, and this month’s menu is here to help you do just that. A delicious baked gnocchi dish is coated in a creamy kale sauce, dotted with sun-dried tomatoes and wrapped in ricotta. A big, cold antipasto salad is packed with butter beans, roasted red peppers, cherry tomatoes, olives, artichokes and herbs – plus my paisans provolone cheese and salami. And finally, a homemade phony negroni made with hibiscus tea, cloves and peppercorns spices the celebration – whether you’re drinking alcohol this month or not! New year, new me? New year, gnocchi!
