Sheet Pan Roasted Pork Chops with Apples & Fennel

Pork chops and apple sauce are a classic combo, and a personal favorite of mine. This easy peasy sheet pan meal perfectly roasts pork chops alongside apples, fennel and shallots, which all find their own levels of sweetness and caramelization right on the pan. Of course, tossing them with a little honey, apple cider vinegar, and ground fennel helps them along a bit. The highlight for me is the apples, which become soft and spreadable, a perfect nod to apple sauce, but with a fresh perspective!
